
Ingredients
1/3 cup organic butter, softened
2/3 cup organic sugar
1/2 cup packed organic brown sugar
2 organic eggs
1 cup organic chunky peanut butter
1/2 teaspoon vanilla extract
2 tablespoons water
3/4 cup organic whole wheat spelt flour
1/4 cup organic white spelt flour
1/4 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1 package organic dark chocolate chips
Directions
Preheat oven to 350 degrees F (175 degrees Celsius). Grease a 9x9 inch baking pan.
In a large mixing bowl, beat together butter and sugars; add eggs one at a time, and beat until mixture is light and fluffy. Stir in peanut butter, vanilla, and water.
In a separate mixing bowl, mix together flours with salt, baking powder, and baking soda. Stir into peanut butter mixture, then put in the entire bag of chocolate chips and blend well. Spread batter into the prepared pan.
Bake in preheated oven for 30 to 35 minutes, or until the top springs back when touched. Cool and cut into 16 squares. You can then melt some chocolate and dip the ends in, it makes for a snazzy display.
