ORGANIC WHOLE WHEAT SPELT PEANUT BUTTER CHOCOLATE CHIP BROWNIES


These turned out really well, everyone loved them, even my son who is not a sweets eater...






Ingredients
1/3 cup organic butter, softened
2/3 cup organic sugar
1/2 cup packed organic brown sugar
2 organic eggs
1 cup organic chunky peanut butter
1/2 teaspoon vanilla extract
2 tablespoons water
3/4 cup organic whole wheat spelt flour
1/4 cup organic white spelt flour
1/4 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1 package organic dark chocolate chips
Directions
Preheat oven to 350 degrees F (175 degrees Celsius). Grease a 9x9 inch baking pan.
In a large mixing bowl, beat together butter and sugars; add eggs one at a time, and beat until mixture is light and fluffy. Stir in peanut butter, vanilla, and water.
In a separate mixing bowl, mix together flours with salt, baking powder, and baking soda. Stir into peanut butter mixture, then put in the entire bag of chocolate chips and blend well. Spread batter into the prepared pan.
Bake in preheated oven for 30 to 35 minutes, or until the top springs back when touched. Cool and cut into 16 squares. You can then melt some chocolate and dip the ends in, it makes for a snazzy display.

TURKEY AND WILD RICE STUFFED BELL PEPPERS

Made these tonight, WOW were they a big hit! 

TURKEY AND WILD RICE STUFFED BELL PEPPERS


The guys were thrilled! 
PREHEAT YOUR OVEN TO 350' 
I used a Pyrex pan and sprayed it with my Trader Joe's olive oil, love that stuff!
6 Bell peppers sliced sideways
2 cups organic already cooked wild rice 
1 package organic ground turkey
1/2 of a package of the Costco goat cream cheese
5 fresh mushrooms diced
1 sweet onion diced
1/2 red pepper diced
1 can organic cream of mushroom soup
1 tsp salt
1 tsp pepper
5 cloves of garlic crushed
1 cup of shredded hard goat cheese to top these beauties off
*make sure to taste and adjust your seasonings accordingly, feel free to add basil etc.

Cook your turkey meat, then add all the other ingredients, spoon into the bell peppers, top with the cheese and bake at 350' for 45 min. to an hour, they are done when the bell peppers get a bit wrinkled.

Spring Puppies

I just love a pile of puppies, don't you? These are my sons puppies, all English Bulldogs and worth quite a bundle. LuLu had 11 puppies, but only 7 survived...can you imagine 11 puppies, one of the biggest recorded litters in history was 13!! Look at those precious little feet!

These are the proud parents, LuLu and Bentley, the puppies are all spoken for already, had no idea English Bulldogs were so in demand.

NEW BLOG FOR HEALTHY RECIPES AND ORGANIC LIFESTYLE

This blog is for my Organic recipes, green tips, and cleaning products, I will be sharing here about my adventures in switching over to a healthy lifestyle, and my weight loss etc.


Need something wonderful for dinner tonight? This is quick and easy to put together, you will need the following:

1 Can of black beans
1 Can of pinto beans
1 Container of sour cream
1 Package of fresh mushrooms chopped
2 Cups of organic frozen corn
1 Cup of shredded cheese
1 Can of diced tomatoes
1 can of diced green chilies
1 can of re fried beans
1 large onion diced
salt, pepper, garlic powder, taco seasoning between each layer to your families taste!

In the bottom of a large Pyrex pan layer in the following:
6 small corn tortillas
then half of the above ingredients, repeat and then top with more cheese. Bake at 350' till hot and bubbly!
I have been looking for delicious Organic recipes and came up with this one, the whole family loved it! I usually have leftovers but this was gobbled up.
